Black Majik Cake
1 3/4 c. all purpose flour 2 c. sugar 3/4 c. cocoa powder 2 tsp. baking soda 1 tsp baking powder 1 tsp sea salt 2 eggs 1 c. strong black coffee, cooled 1 c. buttermilk 1/2 c. vegetable oil (applesauce or banana?) 1 tsp real vanilla extract
Chocolate Frosting: 1/2 c. butter, softened 2 oz melted unsweetened chocolate, cooled 3 c. powdered sugar 3 TBSP milk 2 tsp real vanilla extract
Combine flour, sugar, cocoa, baking soda, baking powder and salt in a large bowl. Add eggs, oil, coffee, buttermilk, and vanilla. Beat at medium speed 2 minutes, batter will be thin. Pour in to greased and floured 9x13 pan or two 9" cake pans. Bake at 350 degrees 35-40 minutes for 9x13, 30-35 minutes for layer pans. Remove from oven and let cool. Beat together frosting ingredients. Spread onto cooled cake.
This is as close to a no-fail cake recipe as it gets. Always turns out moist and super chocolatey, no sifting required. Am making this now - will post a pic as soon as it is cooled and frosted.

Cheesecake Stuffed Strawberries 1- 8 0z pkg fat free cream cheese 3 TB powdered sugar 1 TBS Splenda brown sugar blend 1 tsp vanilla 1/2 tsp lemon juice 1/4 c. graham cracker crumbs 16 large strawberries
Cut tops off of strawberries, and then hollow out the strawberry enough so that you can stuff it. Mix all other ingredients except graham cracker crumbs. Put mixture into zip lock bag, cut corner off, and squeeze mixture into strawberries. Dip top of strawberry and mixture into graham cracker crumbs. Chill for 2 hours.

Chili
2 1/2 pounds extra lean ground beef 1 large finely chopped onion 1 green bell pepper, finely chopped 1 poblano pepper, finely chopped 4 cloves garlic, finely chopped 1 bottle Corona 1 cup strong brewed coffee 1 can (7 oz) chopped green chiles 8 ounces tomato sauce 1 cup water 3 tablespoons chili powder 2 tablespoons cumin 2 tablespoons beef-flavor instant bouillon 2 teaspoons dried oregano leaves 2 teaspoons smoked Hungarian paprika 2 teaspoons sugar 1 teaspoon unsweetened cocoa powder 1/2 teaspoon ground coriander 1/2 teaspoon hot sauce, to taste 1 teaspoon flour 1 teaspoon cornmeal 1 tablespoon warm water
In large saucepan or Dutch oven, brown the meat. Add onion, garlic, green pepper, and poblano; cook and stir until tender. Add remaining ingredients except flour, cornmeal and warm water. Mix well. Bring to boil; reduce heat and simmer covered 2 hours.
Stir together flour and cornmeal; add warm water. Mix well. Stir into chili mixture. Cook covered 20 minutes longer. Serve with cheese stuffed Anaheim peppers and sweet corn bread.
ADDENDUM: I made this again today and I changed it up a little. I made a double batch, and used 5.5 lbs of brisket instead of ground beef. I chopped 1 green and 1 red bell pepper, 2 poblanos, and 1 Anaheim pepper, which I put into the stockpot along with 2 diced yellow onions and the brisket. I poured in 2 1/2 cups of Merlot, added 9 cloves of fresh minced garlic, and simmered it for an hour. Then I added the rest of the ingredients, swapping Guinness for Corona. I let it simmer for 3 hours. It's fantastic!

Currant Quinoa Salad
Ingredients: - Quinoa - Dried currants - Sunflower seeds(raw) - Feta cheese - Red onion - Kale - Broccoli - Lemon - Honey - Olive oil - Spices(I used salted spike & paprika)
Instructions: 1) Put quinoa on to cook. 2) Add hot water to dried currants. Drizzle honey and let sit covered to plump at least 15 min. Maple syrup also works nicely. 3) Steam/boil small broccoli pieces until they are a little crunchy, then drain and cool. 4) Mix a big splash of olive oil, half a lemons juice and a splash of honey. Stir in desired spices. 5) Add sunflower seeds, crumbled feta, chopped onion, chopped kale and broccoli pieces to the mixture. 6) Add cooled quinoa to mixture. Enjoy!
Just made this for the first time today, and its definitely a keeper. Ill be making this again.

Eggs Broccoli Cheddar cheese Parmesan cheese Baked squash(cut in little cubes) Black pepper, greek spice, spike, granulated garlic.

Veggie Burgers!This began with the Whitewater Cookbook recipe for veggie burgers(a local ski hill in BC, Canada.) Ive made modifications to suit my tastes and to make things a little healthier. 1 tbsp. olive oil 1 red onion, diced 3 cloves garlic, minced 1-19 oz can mixed beans, rinsed, drained & slightly mashed(or black or chickpea) 1/2 cup chopped kale 1/2 cup pecans, toasted and chopped(almonds and walnuts are even better!) 2 cups sunflower seeds, toasted 1/2 cup pumpkin seeds, toasted 2 cups rye flour(quinoa or rice flour works very nice too) 1 cup cooked quinoa 1/4 cup soy sauce 5 eggs 2 cups carrots, grated 1 small zucchini grated 2 cups oats 1 tbsp. flax seeds, some ground Spices: Black pepper, spike, paprika, garlic granules, Greek spice. Cooked up quinoa. I browned the onions, garlic and kale with some olive oil then let it cool. Mixed dry together. Mixed wet in a different bowl. Mixed everything together, forming patties and pan fried with olive oil on low-med for about 5 min, flipping half way. Used a lid, melted cheese on top. Served with a salad... Extra Stout Rib Eyes
Freeze 1 bottle of Guinness Extra Stout overnight; thaw (this alters the flavor a bit). Grate 2 cloves of garlic with a microplane, rub into steaks. Liberally sprinkle with Montreal Steak Seasoning. Use two forks to poke holes all over the steaks to tenderize and work the seasoning in. Place in a shallow dish, pour approximately 1/2 the thawed Guinness over them and marinate at room temperature for 1 hour. Broil to desired doneness. Enjoy the mouthgasm.

Stacked nachos
4 oz white queso 2 Tbsp milk 6 oz canola oil 1 bag of uncooked tortilla chips 1 Tsp salt 3 oz shredded lettuce of your choice 2 oz Pico de gallo 6 olives 2 chicken breasts 4 Tsp blackening seasoning
Get your oil to 350, drop in the uncooked tortilla chips, and spread them around with your tongs. Scoop them out when they firm, be sure not to over cook. sprinkle salt on them and put them in a bowl, now put the bowl in the microwave so the chips stay fresh. While your burner is on, put on a deep saucepan and add your milk, then add your queso, stir frequently until desired temp, then put queso in a pan in a hot water bath. Blacken your chicken and grill it, then dice it to your preferred size.
Get two large plates, and distribute the chips evenly on the two, add desired amount of queso to make a layer on the top of the chips, then add your pico and olives, then add your chicken. Now eat it, serves 2-4 drunk people.

Angel Hair with Burnt Butter
1 c. Land o' Lakes butter 4 garlic cloves, minced 1 1/2 c Romano and Mizithra cheese angel hair pasta
Browned Butter : Cut into cubes and place in a 2-quart sauce pan. Melt over medium heat. Bring butter to a slow boil. As butter boils stir constantly to prevent residue from sticking to the pan. Butter will begin to foam and rise. Continue stirring, so butter doesn't boil over and catch fire. Continue cooking until amber in color. Turn off the heat and remove pan from burner. Use about 1 TBSP of the butter to sautee garlic. Boil and drain pasta. Pour the brown butter through a strainer into glass measuring cup with spout. Add sauteed garlic. Plate pasta. Top with cheese then butter.
Serve with hot bread sticks.
Variation: sautee pancetta, sun- dried tomatoes, and fresh spinach in white wine. Toss with pasta.
Variation2: EXCELLENT as a side dish with the Guinness Steak recipe

Angel Food Pancakes 1 c angel food cake mix 3/4 c flour 4 TBSP melted butter 1 3/4 c milk 2 egg whites 2 tsp sugar 1 tsp baking powder 1/2 tsp baking soda pinch salt
Whisk together dry ingredients. Whisk together wet ingredients. Pour wet ingredients into a well in the flour mixture. Whisk or stir just until incorporated. Allow batter to rest a few minutes. Drop 1/4 c batter onto hot non- stick griddle or skillet. Flip when edges are dry and most bubbles pop. Drizzle with melted vanilla frosting and top with sprinkles.
