Yay Leash! I love quinoa! ...and bulgar...and amaranth...but I almost live in a whole foods store lol I'm gonna make this tonight, sounds yummy!

Almond Cookies - Lemon & Cranberry
1cup (250 mL) butter 3/4cup cup (175 mL) granulated sugar 1tsp (5 mL) vanilla 1 cup (250 mL) almond slices 2 cups (500 mL) all-purpose flour ... I then added a large squirt of lemon juice(fresh!), lemon zest and cranberries to taste. Not sure how much.
Grease baking sheets.
In large bowl, beat butter until fluffy; beat in sugar, lemon juice, lemon zest and vanilla extract. Stir in ground almonds and dried cranberries. Mix in flour, 1/2 cup (125 mL) at a time, to make smooth dough.
Roll dough into small balls and place on prepared pans.
Bake at 325°F (160°C) until bottoms are golden, about 20 minutes. Let firm on pans for 3 minutes; transfer to racks to let cool.

Stole this off Cooks.com today. Made a half batch... Added blueberries and cinnamon instead of chocolate chips. Super tasty! BANANA MUFFINS
1 cup sugar 1 1/2 cup melted butter 2 eggs 2 cups flour 1 tsp. baking soda 1 tsp. baking powder (note that soda and powder are different) 1 tsp. vanilla extract 3 ripe bananas 1 cup chocolate chips (OPTIONAL)
1. Preheat the oven to 350*F/180*C. 2. Sift the flour, baking powder and baking soda together. 3. Put the Mixture aside. 4. Mix the melted butter and sugar in another bowl till creamy. 5. Add the eggs one at a time and then add the vanilla essence. 6. Add the flour mixture a little bit at a time. Mix well. 7. Mash the bananas with a fork till it's completely mashed. 8. Mix the bananas into the muffin batter. (OPTIONAL) Mix the chocolate chips with a fork. 9. Put two table spoons of the batter into each muffin cup of the pan 10. Bake for 20-30 mins. 11. Let it cool before taking it out. Tastes good with tea.

Instead of cranberry/lemon I changed it up and added cinnamon and cocoa powder with dark chocolate chips. Amazing.

Chicken Wing Meatballs
3/4 cup of hot sauce 1/2 cup butter melt and add into the hot sauce; let cool 2lbs ground chicken 3/4 cup bread crumbs 2 eggs 1 tsp salt
In a bowl mix ground chicken, bread crumbs, eggs and salt. add cooled hot sauce and butter, make meatballs what ever size you want and bake. Bake at 375 for about 30-40 min until chicken is completly cooked through. I doubled the hot sauce and butter so there would be a sauce to pour over the top. Enjoy!

Had a bit of inspiration tonight, made it up as I went...was excellent, we'll see if it reproduces Guiness Steak Pie 1/2 (17.5 ounce) package frozen puff pastry, thawed 1 tablespoon butter 1/2 pound cubed shoulder steak 2 carrots, sliced 1 small yam, diced 2 red potatoes, diced (skins on) 1/2 yellow onion, diced 1 cup Guiness 1 pkg dry brown gravy mix black pepper 1 tsp garlic powder 1/4 tsp thyme Preheat oven to 375 degrees F. Heat a large skillet over high heat. Add butter, meat, onion and veggies. Toss to coat, sprinkle with 1/2 the garlic and pepper, and saute just long enough to brown meat on all sides. Remove from heat. Place in a 1 quart baking dish. Place Guiness, remaining garlic, pepper, thyme and gravy mix in a medium saucepan. Bring to a simmer, whisking constantly. Continue to simmer until mixture has thickened. Pour mixture over meat and vegetables. Trim puff pastry to fit over top of filling. Add strips for a lattice effect. Bake in oven 45 to 50 minutes, until pastry is deep golden brown.

Cognac Crepes
2 eggs 1/2 cup milk 1/2 cup water 3/4 cup all-purpose flour 6 teaspoons white sugar 1 tsp butter 1 fluid ounce cognac
In a large bowl, mix together eggs, milk, water, flour, sugar, 1 teaspoon butter, and cognac. heat a small skillet (or crepe pan) to a high temperature. Place a small amount of batter into the skillet and swirl it around until the batter covers the bottom of the pan. When the crepe is slightly browned flip the crepe over and let the other side brown for a few seconds. The first crepe will most likely not turn out well, but the rest will. Stack the crepes on top of each other to let them cool before filling.
Fill with sliced fresh strawberries and dark chocolate; or Nutella, bananas and caramel.

Cinnamon Chipotle Brownies
8 ounces 70% cocoa bars, coarsely chopped 6 tablespoons butter, cut into 12 pieces 1/3 cup plus 1 tablespoon all-purpose flour 1 teaspoon cinnamon 1/2 to 3/4 teaspoon chipotle chili powder 1/4 to 1/2 teaspoon salt 3 large eggs 1 cup sugar 1 teaspoon vanilla extract
Preheat oven to 350 degrees. Line an 8 x 8 baking dish with nonstick "release" foil or parchment paper (or use regular foil, then coat with cooking spray), letting at least 6 inches hang over two of the sides like handles.
Put chocolate and butter in a microwave-safe bowl and microwave on medium-low power 45 seconds. Stir and continue to microwave in 15-20 second intervals, stirring each time, just until chocolate is smooth; be careful not to over heat. You can do this in a double boiler if you prefer. Set aside to cool slightly. In another bowl, beat the eggs, sugar and vanilla with an electric mixer on high speed until thick and light-colored, about 2 minutes. Whisk in the chocolate. Gently fold in the flour mixture. Pour batter into prepared pan and bake 30 to 35 minutes (mine took exactly 32) or until a toothpick inserted in the center comes out with little or no chocolate; toothpick should come out clean when inserted near the edge.

BLUEBERRY BANANA MUFFINS
2 c. all-purpose flour 1/3 c. brown sugar 1/3 c. white sugar 1 1/2 tsp baking powder 1/2 tsp baking soda 1/4 tsp salt 1 1/4 c. almond milk 1 c. frozen blueberries, thawed and well drained 1 very large ripe banana 1 large egg cooking spray
Preheat oven to 400 degrees.
Combine flour, baking powder, baking soda, white sugar, brown sugar, & salt. Make a well in the center. Set aside.
Mash banana well. Whisk banana, almond milk, & egg. Pour into the well in the flour mixture. Add blueberries. Stir just until combined. Spray muffin cups with cooking spray. Spoon batter into muffin cups.Bake @ 400 degrees for 18 minutes.
Yields 12 muffins
Variations: Replace 1/2 the flour with cornmeal or graham flour. Substitute raspberries or mini dark chocolate chips for the blueberries.

Gorditas
3 c. all purpose flour 1/2 tsp salt 2 1/2 TBSP baking powder 6 TBSP shortening 1 c. water
2 inches vegetable oil for frying
Combine flour, salt, baking powder, and shortening; mix until shortening is blended. Add water, mix well. Turn out onto lightly floured board, knead until smooth, about 2 minutes. Roll dough into a ball; place in a plastic bag and let sit 10 minutes. Separate into 10 balls and roll each ball into a flat round 4 to 6". In a cast iron skillet heat oil to 375 degrees. Place rounds in oil one at a time, cooking each side until golden brown. Drain on paper towels. Fill with grilled chicken, shredded lettuce, chopped tomatoes, shredded cheese, corn, black beans, fresh cilantro, and avocado ranch dressing.

Hidden Valley brand makes a bottled avocado ranch salad dressing, but I like to mash ripe avocados and add a little ranch.

Leashs Curried Chickpea SaladI sort of wing it, so no exact measurements... - 1 can rinsed canned chickpeas
- 1 long english cucumber chopped
- 1 can whole kernel corn drained
- Finely chopped red onion(I use like 1/10th of a small one)
- Chopped parsley
- Black pepper & salt
- Curry powder
- Splash of olive oil
- 2 tbsp mayo(I use Helmans olive oil)
- Chopped olives, if youre a fan... They add a nice zing!
Mix it all together. Taste and add any lacking ingredients as needed. Eat! Serves about 6, makes a nice side dish or fast snack. Gets a little watery if in the fridge a few hours.
