hey guys, ive been wanting to do this for a while.. but i never have the time to write all this stuff up(maybe im just lazy?) haha.. anyways, ill post a few of mine for you guys to enjoy. feel free to share any desserts, drinks, or anything else that you love to make! ______________________________ - orange smoothie -
ingredients: - frozen concentrated orange juice(a couple tablespoons worth) - ice cubes(maybe five or six?) - couple scoops of icecream - a splash of milk - one teaspoon of vanilla extract
directions: - put all ingredients into blender. - blend until smooth. - taste. - add more of any ingredient(s) that seem to be lacking. - eat/drink.
note: works well with a shot or two of vodka.

quickie marinated salmon:
(1) 2-3lbs fresh salmon (numerous kinds, nowrwigen is good)
(2) 1 stick fo butter
(3) 1-2 bottles of itallian dressing, pref. garlic herb style
(4) bag o' mesquite wood chips
(5) a roll of tin foil
(6) freezer bags
(7) put the salmon in the freezerbags pour in ample amount of itallian dressing, let marinate 35min-1hr.place in refrigerator. (8) mix wood chips & briquettes, ignite
(9) remove salmon from freezer bags baste with butter, wrap in foil
(10) place on q & let 'em sit 15-20 min per side, check with fork, if easily flaky your good. ...enjoy! ;D

an excellent variation on *fire's is tuna steaks with lime and coriander...again, marinade (not for so long though), wrap in foil and either BBQ or bake for 15-20 mins. Serve with a great salad and new potatoes.

-cheese biscuits-
ingredients: - 1/4 cup shortning(or margarine/butter) - 2 cups flour - 1 tablespoon baking powder - 1 teaspoon salt - 3/4 cup milk - 3/4 cup grated cheese
directions: - pre-heat oven to 450 F. - sift flower, baking powder, salt, and cheese into bowl. - add shortening(or margerine/butter) and cut in. - add milk and stir with fork. - kneed dough 1/2 inch thick. - cut into even circles. - put on un-greased cookie sheet. - bake for about 10 minutes.
note: goes well with soup.

Now that I have found this thread - BEWARE!!
GREEN BEAN PICKLES
1 lb fresh green beans, cleaned and kept whole 1 cup vinegar (I used wine vinegar) 1 cup water 1 T mustard seeds 1 T fresh dill or 1 tsp dry 2-3 cloves garlic, minced (or 1/2 tsp garlic powder) 1 tsp salt 1 tsp sugar cayenne pepper to taste
Put all in a big pot with a lid. Bring to a boil, turn down heat and let simmer for 10-15 minutes or to your desired degree of tender-crispness. I let them go until they just turn that army green color.
Keep in tightly closed container (plastic or glass preferably) in the refirgerator. They keep about a week or so and improve in flavor. Make sure you put the beans AND juice in the container or they will dry out.

leashs macaroni cheese bake
ok, since i always make this without measuring, you may have to figure out a few things on your own.
ingredients: - macaroni - grated cheese - cream of mushroom soup - milk - broccoli - cauliflower - salt - black pepper
directions: - pre-heat oven. - chop broccoli and cauliflower and put into a pot with a little water to boil. - cook macaroni until it is slightly undercooked. - strain macaroni and place in glass pan or something that can go in the oven. - mix cheese, cream of mushroom soup, a splash of milk, and a pinch of salt in a big bowl. - add mixture to macaroni. - chop cauliflower and broccoli when almost ready and add to mixture. - sprinkle a thin layer of cheese on top with a touch of black pepper. - cover with foil and stick in oven for about 15 min.

BAKED ZITI
1 pound dry ziti pasta 1 onion, chopped 1/4 c. diced black olives 1 pound lean ground beef 2 (26 ounce) jars spaghetti sauce 6 ounces provolone cheese, sliced 1 1/2 cups sour cream 6 ounces mozzarella cheese, shredded 2 tablespoons grated Parmesan cheese
DIRECTIONS: Bring a large pot of lightly salted water to a boil. Add ziti pasta, and cook until al dente, about 8 minutes; drain. In a large skillet, brown onion and ground beef over medium heat. Add spaghetti sauce and black olives, simmer 15 minutes. Preheat the oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish. Layer as follows: 1/2 of the ziti, Provolone cheese, sour cream, 1/2 sauce mixture, remaining ziti, mozzarella cheese and remaining sauce mixture. Top with grated Parmesan cheese. Bake for 30 minutes in the preheated oven, or until cheeses are melted.

Shrimp Skewers
3 tablespoons olive oil 1 tablespoon minced peeled fresh ginger 2 garlic cloves, minced 1 teaspoon dried crushed red pepper 18 uncooked colossal shrimp or 36 jumbo shrimp (about 2 pounds), peeled, tails left intact, deveined 2 red bell peppers, each cut into 12 pieces 2 firm but ripe mangoes, peeled, pitted, each cut into 12 wedges 6 12-inch bamboo skewers (for colossal shrimp) or twelve 12-inch bamboo skewers (for jumbo shrimp), soaked in water 30 minutes, drained Guava-Lime Glaze
Prepare barbecue (medium-high heat). Mix first 4 ingredients in large bowl. Add shrimp, bell peppers and mangoes; toss to coat. Alternate bell pepper, mango and 3 colossal shrimp on each of 6 skewers, or alternate bell pepper, mango and 3 jumbo shrimp on each of 12 skewers. (Can be prepared 4 hours ahead. Cover and chill.) Grill shrimp until cooked through, brushing with glaze during last 2 minutes, cooking colossal shrimp about 4 minutes per side and jumbo shrimp about 3 minutes per side.

Lamb Souvlaki
2 tbsp extra-virgin olive oil 1 tbsp chopped fresh garlic 1 1/2 tsp oregano 3/4 tsp freshly ground black pepper 3/8 tsp kosher salt 3/4 lb lamb, cut from the leg into 12 equal-sized cubes 2 yellow bell peppers, cored and cut into 1-inch strips 1 red onion, cut into 8 pieces 16 cherry tomatoes Vegetable-oil cooking spray 4 whole-wheat pitas
Yogurt-Garlic Sauce 2 cucumbers, peeled and chopped 1 fresh tbsp lemon juice 3/4 cup nonfat Greek-style yogurt 1 tsp chopped fresh garlic
For souvlaki, mix first 5 ingredients to make a marinade and set aside. Distribute lamb, bell peppers, onion and tomatoes among 8 skewers. Place in a large shallow pan with marinade. Cover and refrigerate at least 3 hours, rotating skewers once. Heat a gas grill to medium, or use a charcoal grill and allow the coals to turn a light-ash color. Coat grill with cooking spray. Grill until lamb is medium rare and lightly charred, 5 to 8 minutes. Rotate to cook evenly. To cook in oven, broil on metal skewers 6 minutes, rotating until evenly browned. Grill or toast pitas. For sauce, puree cucumbers and a pinch of salt in a food processor. Place in a fine-screen colander and squeeze out the juice. Reserve juice and discard pulp. Whisk cucumber and lemon juices in a bowl with yogurt. Mix in garlic; season with salt and pepper. Serve with pitas and skewers.

homestyle poutine
i made this for the first time last night.. it turned out quite well.
ingredients: - potatoes(red preferably.. or frozen fries if youre lazy!) - cheese(cheedar and/or mozza) - gravy(i used some packaged poutine gravy) - vegetable oil - salt - seasoning salt - black pepper
instructions: - preheat oven. - peel and cut up potatoes into fry shapes. - throw potatoes into large bowl - pour oil over top and sprinkle with salt, seasoning salt, and pepper. mix. - put potatoes into glass pan or something that can go into your oven. - when almost cooked, top with grated cheese. - add gravy and devour!

- preheat oven to 325 F.
1/3 cup butter 1 cup sugar 2 eggs
- cream together, then add grated lemon rind.
1 ½ cups flour 1 tsp. baking powder ½ cup milk ¼ tsp. salt
- mix together well. - pour in greased loaf(bread) pan. - bake for one hour. - let cool for ten minutes. - pour juice of one lemon mixed with 1/3 cup white sugar over loaf.

Mediterranean Tuna Pitas
whole wheat pitas (split) 12 oz. canned tuna (or salmon, packed in oil) scallions alfalfa sprouts swiss cheese fresh leaf spinach tomato slices Miracle Whip dill garlic basil sage balsalmic vinegar
combine 1 cup Miracle Whip, dill weed and basil. cover and refirigerate. Do not drain tuna or salmon. Put into a large bowl, add garlic and sage, scallions and about 1/4 cup balsalmic vinegar, stir well, cover and refrigerate at least one hour.
When ready to eat, split pitas and toast in broiler or toaster oven. Slather on herbed Miracle Whip, add cheese, spinach, tomatoes and sprouts, and fill with tuna mixture.
My lunch today, yay for me!
